Chicken Salad Wraps
These chicken salad wraps are the lunch you will actually look forward to eating. Creamy, crunchy, and packed with protein, they come together in 15 minutes with simple ingredients.
Ingredients
- 2 cups cooked shredded chicken
- ½ cup mayonnaise
- 1 celery stalk, finely diced
- ¼ cup diced red onion
- ¼ cup sliced almonds or walnuts (optional)
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 4 large flour tortillas or lettuce wraps
- Fresh lettuce leaves
Instructions
- In a large bowl, combine shredded chicken, mayonnaise, celery, red onion, and nuts if using.
- Add lemon juice, salt, and pepper. Mix until well combined.
- Lay tortillas flat. Place lettuce leaves on each, then spoon chicken salad down the centre.
- Fold in the sides and roll tightly. Slice in half and serve.
