One-Pot Creamy Chicken Pasta

This one-pot creamy chicken pasta is the dinner you turn to on busy weeknights. Tender chicken, perfectly cooked pasta, and a rich creamy sauce — all made in a single pot with minimal cleanup.

Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless chicken breast, cubed
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or fusilli pasta
  • 1 cup grated Parmesan
  • 1 cup fresh spinach
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then cook for 5-6 minutes until golden and cooked through. Remove and set aside.
  2. In the same pot, add minced garlic and cook for 30 seconds. Pour in chicken broth and bring to a boil.
  3. Add pasta and cook according to package directions, stirring occasionally, until al dente and most liquid is absorbed.
  4. Reduce heat to low. Stir in heavy cream, Parmesan, and spinach until the spinach wilts and the sauce is creamy.
  5. Return the chicken to the pot. Stir well, adjust seasoning, and serve hot.

Tips

  • Use a large pot — the pasta needs room to cook evenly.
  • Reserve extra broth if the pasta absorbs too much liquid before it’s tender.
  • Add a pinch of nutmeg to the cream sauce for extra depth.
