Zucchini Lasagna (Low-Carb)

Hearty, cheesy zucchini lasagna that is low-carb and incredibly satisfying. Zucchini slices replace pasta for a lighter take on the classic.

Ingredients

  • 4 medium zucchinis, sliced lengthwise into ¼-inch strips
  • 1 lb ground turkey or lean beef
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella
  • 1 egg
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Brown the ground meat with garlic in a skillet. Add marinara sauce and oregano. Simmer for 5 minutes.
  3. Mix ricotta with egg, salt, and pepper until well combined.
  4. In a baking dish, layer: a thin layer of sauce, zucchini slices, ricotta mixture, mozzarella. Repeat 2-3 times.
  5. Top with remaining mozzarella. Bake for 35-40 minutes until bubbly and golden. Let rest 10 minutes before serving.
