Zucchini Lasagna (Low-Carb)
Hearty, cheesy zucchini lasagna that is low-carb and incredibly satisfying. Zucchini slices replace pasta for a lighter take on the classic.
Ingredients
- 4 medium zucchinis, sliced lengthwise into ¼-inch strips
- 1 lb ground turkey or lean beef
- 2 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella
- 1 egg
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 190°C (375°F).
- Brown the ground meat with garlic in a skillet. Add marinara sauce and oregano. Simmer for 5 minutes.
- Mix ricotta with egg, salt, and pepper until well combined.
- In a baking dish, layer: a thin layer of sauce, zucchini slices, ricotta mixture, mozzarella. Repeat 2-3 times.
- Top with remaining mozzarella. Bake for 35-40 minutes until bubbly and golden. Let rest 10 minutes before serving.
