No-Heat Lunchbox (No Cooking Needed)

A complete no-cook lunchbox for days when you need a fresh, no-heat meal.

Ingredients

  • 1 whole wheat tortilla or pita
  • 2 tbsp cream cheese or hummus
  • Handful of mixed greens
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumber slices
  • 1 apple or banana
  • Small handful almonds

Instructions

  1. Spread cream cheese on tortilla. Layer greens, roll, and slice or fold.
  2. Pack veggies, fruit, and almonds in separate compartments.
  3. Wrap or seal in lunchbox. Keep cool until lunch.
