Creamy Tomato Basil Soup

Rich, creamy tomato basil soup made with simple ingredients. Better than canned, ready in 30 minutes, and perfect with a grilled cheese sandwich.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cans (14 oz each) crushed tomatoes
  • 1 cup vegetable broth
  • ½ cup heavy cream
  • ¼ cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion for 4-5 minutes until soft. Add garlic and cook 1 minute.
  2. Add crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
  3. Remove from heat. Using an immersion blender, blend until smooth (or blend in batches in a regular blender).
  4. Stir in heavy cream and fresh basil. Season with salt and pepper. Heat through for 2 minutes and serve.
