Creamy Tomato Basil Soup
Rich, creamy tomato basil soup made with simple ingredients. Better than canned, ready in 30 minutes, and perfect with a grilled cheese sandwich.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cans (14 oz each) crushed tomatoes
- 1 cup vegetable broth
- ½ cup heavy cream
- ¼ cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion for 4-5 minutes until soft. Add garlic and cook 1 minute.
- Add crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
- Remove from heat. Using an immersion blender, blend until smooth (or blend in batches in a regular blender).
- Stir in heavy cream and fresh basil. Season with salt and pepper. Heat through for 2 minutes and serve.
