Cold Sesame Noodle Salad

Cold sesame noodles are the make-ahead lunch you will want on repeat. Chewy noodles tossed in a savoury, nutty dressing with crunchy vegetables.

Ingredients

  • 8 oz dried spaghetti or Chinese noodles
  • ¼ cup sesame paste or peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or sugar
  • 1 garlic clove, minced
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Cook noodles according to package directions. Drain, rinse under cold water, and drain well.
  2. In a bowl, whisk together sesame paste, soy sauce, rice vinegar, sesame oil, honey, and garlic.
  3. Toss the cold noodles with the dressing until well coated.
  4. Divide among bowls and top with cucumber, green onions, and sesame seeds.
