Cold Sesame Noodle Salad
Cold sesame noodles are the make-ahead lunch you will want on repeat. Chewy noodles tossed in a savoury, nutty dressing with crunchy vegetables.
Ingredients
- 8 oz dried spaghetti or Chinese noodles
- ¼ cup sesame paste or peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey or sugar
- 1 garlic clove, minced
- 1 cucumber, julienned
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
Instructions
- Cook noodles according to package directions. Drain, rinse under cold water, and drain well.
- In a bowl, whisk together sesame paste, soy sauce, rice vinegar, sesame oil, honey, and garlic.
- Toss the cold noodles with the dressing until well coated.
- Divide among bowls and top with cucumber, green onions, and sesame seeds.
