One-Pan Lemon Chicken & Potatoes

A complete family dinner on one pan — juicy lemon chicken and crispy roast potatoes.

Ingredients

  • 4 bone-in chicken thighs
  • 4 medium potatoes, quartered
  • 3 tbsp olive oil
  • 2 lemons, juiced and zested
  • 4 garlic cloves, smashed
  • 1 tsp dried oregano
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 200C. Line a baking sheet with parchment.
  2. Whisk oil, lemon juice/zest, garlic, herbs, salt, pepper.
  3. Toss chicken and potatoes in marinade. Spread on sheet.
  4. Roast 35-40 min, flipping halfway. Serve hot.
