One-Pan Lemon Chicken & Potatoes
A complete family dinner on one pan — juicy lemon chicken and crispy roast potatoes.
Ingredients
- 4 bone-in chicken thighs
- 4 medium potatoes, quartered
- 3 tbsp olive oil
- 2 lemons, juiced and zested
- 4 garlic cloves, smashed
- 1 tsp dried oregano
- 1 tsp dried rosemary
Instructions
- Preheat oven to 200C. Line a baking sheet with parchment.
- Whisk oil, lemon juice/zest, garlic, herbs, salt, pepper.
- Toss chicken and potatoes in marinade. Spread on sheet.
- Roast 35-40 min, flipping halfway. Serve hot.
