Tuna & Corn Pita Pockets

Quick no-cook pita pockets stuffed with creamy tuna and sweetcorn.

Ingredients

  • 1 can tuna, drained
  • 1/2 cup sweetcorn
  • 2 tbsp mayo or Greek yogurt
  • 1/4 cup diced cucumber
  • 2 pita breads
  • Handful of lettuce

Instructions

  1. Mix tuna, sweetcorn, mayo, and cucumber.
  2. Warm pitas slightly. Cut in half to form pockets.
  3. Line with lettuce. Fill with tuna mixture.
