Mini Pizza Quesadillas

These mini pizza quesadillas combine two kid favourites into one lunchbox win. They are quick to make, easy to pack, and taste amazing warm or cold. The perfect school lunch upgrade.

Ingredients

  • 4 small flour tortillas
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella
  • 1/4 cup mini pepperoni (optional)
  • Cooking spray or butter

Instructions

  1. Lay tortillas flat. Spread pizza sauce on one half of each.
  2. Sprinkle mozzarella and pepperoni (if using) over the sauce.
  3. Fold tortillas in half to create half-moon shapes.
  4. Heat a pan over medium heat and lightly grease.
  5. Cook each quesadilla for 2-3 minutes per side until golden and cheese is melted.
  6. Let cool slightly, then cut into wedges. Pack in lunchboxes.

Notes
