Easy Bean & Rice Burritos

Simple budget-friendly bean and rice burritos.

Ingredients

  • 1 tbsp oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 can black beans drained
  • 1 cup cooked rice
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 4 large tortillas
  • 1 cup shredded cheddar

Instructions

  1. Heat oil. Saute onion 3 min. Add garlic 30 sec.
  2. Add beans rice cumin chili powder. Cook 5 min mashing slightly.
  3. Warm tortillas. Divide filling. Top with cheese.
  4. Fold sides roll tightly. Serve with salsa.
