Veggie & Hummus Wrap
This veggie and hummus wrap is a lunchbox winner — colourful, nutritious, and easy to eat. Creamy hummus acts as the glue that holds everything together while adding protein and flavour. Packed with crunchy vegetables, it’s a great way to sneak extra veggies into your child’s lunch. Best of all, it takes just 10 minutes to make.
Ingredients
- 1 large flour tortilla (or whole wheat wrap)
- 3 tablespoons hummus (plain or flavoured)
- ¼ cup shredded carrots
- ¼ cup cucumber, cut into thin strips
- ¼ cup bell pepper, thinly sliced
- ¼ cup shredded lettuce or spinach
- Optional: sliced avocado or cheese
Instructions
- Lay the tortilla flat on a clean surface. Spread hummus evenly across the entire tortilla, leaving a 1-inch border around the edges.
- Layer the shredded carrots, cucumber strips, bell pepper slices, and lettuce in a line down the centre of the tortilla. Don’t overfill — a handful of each is plenty.
- Fold in the sides of the tortilla about 1 inch, then roll tightly from the bottom edge, keeping the filling tucked in as you go.
- Wrap the rolled tortilla in parchment paper or plastic wrap. Refrigerate for at least 30 minutes to help it hold its shape (or make the night before).
- When ready to pack, slice the wrap in half diagonally. Pack in a lunchbox with a small container of extra hummus for dipping.
