Budget Vegetable Curry

Flavourful vegetable curry with affordable ingredients.

Ingredients

  • 1 tbsp oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 2 potatoes cubed
  • 2 carrots sliced
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 cup frozen peas

Instructions

  1. Heat oil. Saute onion 3 min. Add garlic and spices 1 min.
  2. Add potatoes carrots. Stir to coat.
  3. Pour in coconut milk and broth. Simmer 20 min.
  4. Stir in peas. Cook 3 min. Serve over rice.
