One-Pot Lemon Herb Chicken & Rice

Juicy lemon herb chicken and fluffy rice cooked in one pot. A complete dinner with minimal cleanup and maximum flavour.

Ingredients

  • 4 bone-in chicken thighs
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain rice
  • 1½ cups chicken broth
  • 1 lemon, juiced and zested
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken thighs with salt, pepper, and half the herbs. Heat oil in a large pot over medium-high heat. Brown chicken for 4-5 minutes per side. Remove and set aside.
  2. In the same pot, sauté onion for 3 minutes. Add garlic and cook 30 seconds.
  3. Add rice, broth, lemon juice, lemon zest, and remaining herbs. Stir and bring to a boil.
  4. Place chicken thighs on top of the rice. Cover, reduce heat to low, and simmer for 20-25 minutes until rice is tender and chicken is cooked through.
  5. Fluff rice with a fork. Garnish with parsley and serve.
