Baked Chicken Parmesan

Crispy baked chicken Parmesan with gooey mozzarella and rich marinara. A healthier version of the classic that doesn’t sacrifice flavour.

Ingredients

  • 4 boneless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 large eggs, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment.
  2. Mix breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper in a shallow dish.
  3. Dip each chicken breast in beaten egg, then coat in the breadcrumb mixture.
  4. Place on the baking sheet and drizzle with olive oil. Bake for 20 minutes, flipping halfway.
  5. Spoon marinara sauce over each breast, top with mozzarella. Bake 5 more minutes until cheese is melted and bubbly. Serve hot.
