Budget Shepherd’s Pie
A hearty and budget-friendly shepherd’s pie featuring seasoned minced meat, mixed vegetables, and creamy mashed potato topping. Comfort food that feeds a family without breaking the bank.
Ingredients
- 1 lb ground beef or lamb
- 1 onion, diced
- 2 carrots, diced
- 2 garlic cloves, minced
- 1 cup frozen peas
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 4 cups mashed potatoes
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- In a large skillet over medium-high heat, cook the ground meat for 5-6 minutes until browned. Drain excess fat.
- Add onion and carrots and cook for 4 minutes. Add garlic and cook 1 minute.
- Stir in tomato paste, Worcestershire sauce, beef broth, and frozen peas. Simmer for 5 minutes until slightly thickened. Season with salt and pepper.
- Transfer to a baking dish. Spread the mashed potatoes evenly over the top. Dot with butter.
- Bake for 20-25 minutes until the filling is bubbly and the potatoes are golden. Let rest 5 minutes before serving.
