One-Pot Creamy Chicken Pasta
This one-pot creamy chicken pasta is the dinner you turn to on busy weeknights. Tender chicken, perfectly cooked pasta, and a rich creamy sauce — all made in a single pot with minimal cleanup.
Ingredients
- 2 tbsp olive oil
- 1 lb boneless chicken breast, cubed
- 3 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or fusilli pasta
- 1 cup grated Parmesan
- 1 cup fresh spinach
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then cook for 5-6 minutes until golden and cooked through. Remove and set aside.
- In the same pot, add minced garlic and cook for 30 seconds. Pour in chicken broth and bring to a boil.
- Add pasta and cook according to package directions, stirring occasionally, until al dente and most liquid is absorbed.
- Reduce heat to low. Stir in heavy cream, Parmesan, and spinach until the spinach wilts and the sauce is creamy.
- Return the chicken to the pot. Stir well, adjust seasoning, and serve hot.
Tips
- Use a large pot — the pasta needs room to cook evenly.
- Reserve extra broth if the pasta absorbs too much liquid before it’s tender.
- Add a pinch of nutmeg to the cream sauce for extra depth.
