Chicken Salad Stuffed Cucumbers
These chicken salad stuffed cucumbers turn an ordinary lunch into something fun. Hollowed cucumber slices become little boats filled with creamy, protein-packed chicken salad. They’re bite-sized, easy to eat, and a great way to add vegetables to your child’s lunch without complaint. Perfect for make-ahead lunch prep.
Ingredients
- 1 large cucumber
- 1 cup cooked chicken, shredded or finely diced
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon finely chopped celery
- 1 tablespoon grated carrot
- Salt and pepper to taste
- Optional: a squeeze of lemon juice
Instructions
- Make the chicken salad: In a small bowl, combine shredded chicken, mayonnaise (or Greek yogurt), chopped celery, grated carrot, salt, and pepper. Mix well. Add a squeeze of lemon juice if desired.
- Prepare the cucumber: Wash the cucumber and cut it into 1-inch thick rounds. You should get about 8-10 rounds from one cucumber.
- Using a small spoon or melon baller, gently scoop out the centre of each cucumber round, leaving the bottom intact to create a little cup or boat. Be careful not to go all the way through.
- Fill each cucumber boat with a spoonful of chicken salad, mounding it slightly on top.
- Arrange in a lunchbox container. These are best eaten the same day. For meal prep, store the cucumber boats and chicken salad separately and assemble in the morning.
