Mini Pizza Quesadillas
These mini pizza quesadillas combine two things kids love — pizza and quesadillas — into one lunchbox-friendly package. They’re warm, cheesy, and filled with classic pizza flavours, but sturdy enough to pack. Make a batch on Sunday and you’ve got lunches sorted for the week. They taste great cold or warm, so no need to reheat at school.
Ingredients
- 4 small flour tortillas (or 2 large cut into rounds)
- ½ cup pizza or marinara sauce
- 1 cup shredded mozzarella cheese
- ¼ cup mini pepperoni slices (optional)
- ¼ cup finely chopped bell peppers (optional)
- Olive oil for brushing
Instructions
- Lay a tortilla flat on a clean surface. Spread 1-2 tablespoons of pizza sauce on one half of the tortilla, leaving a small border around the edge.
- Sprinkle a generous amount of mozzarella cheese over the sauce. Add pepperoni slices and bell pepper pieces if using.
- Fold the empty half of the tortilla over the filling to create a half-moon shape. Press gently to help it stick.
- Heat a non-stick pan or griddle over medium heat. Lightly brush with olive oil. Place the quesadilla in the pan and cook 2-3 minutes per side, until golden brown and the cheese is melted inside.
- Remove from heat and let cool slightly. Cut into wedges using a pizza cutter. Pack in a lunchbox — they’re delicious warm or at room temperature.
