Mini Pizza Quesadillas

These mini pizza quesadillas combine two things kids love — pizza and quesadillas — into one lunchbox-friendly package. They’re warm, cheesy, and filled with classic pizza flavours, but sturdy enough to pack. Make a batch on Sunday and you’ve got lunches sorted for the week. They taste great cold or warm, so no need to reheat at school.

Ingredients

  • 4 small flour tortillas (or 2 large cut into rounds)
  • ½ cup pizza or marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup mini pepperoni slices (optional)
  • ¼ cup finely chopped bell peppers (optional)
  • Olive oil for brushing

Instructions

  1. Lay a tortilla flat on a clean surface. Spread 1-2 tablespoons of pizza sauce on one half of the tortilla, leaving a small border around the edge.
  2. Sprinkle a generous amount of mozzarella cheese over the sauce. Add pepperoni slices and bell pepper pieces if using.
  3. Fold the empty half of the tortilla over the filling to create a half-moon shape. Press gently to help it stick.
  4. Heat a non-stick pan or griddle over medium heat. Lightly brush with olive oil. Place the quesadilla in the pan and cook 2-3 minutes per side, until golden brown and the cheese is melted inside.
  5. Remove from heat and let cool slightly. Cut into wedges using a pizza cutter. Pack in a lunchbox — they’re delicious warm or at room temperature.

  • Cooking spray or butter

Method
 

  1. Lay tortillas flat. Spread pizza sauce on one half of each.
  2. Sprinkle mozzarella and pepperoni (if using) over the sauce.
  3. Fold tortillas in half to create half-moon shapes.
  4. Heat a pan over medium heat and lightly grease.
  5. Cook each quesadilla for 2-3 minutes per side until golden and cheese is melted.
  6. Let cool slightly, then cut into wedges. Pack in lunchboxes.

Notes

Tastes great cold or at room temperature, so no need to reheat at school. Make a batch on Sunday for the week.
