Chicken Fried Rice

Quick economical fried rice using leftover rice and chicken.

Ingredients

  • 2 cups cooked cold rice
  • 1 chicken breast diced
  • 2 tbsp oil
  • 2 eggs beaten
  • 1 cup frozen mixed veg
  • 3 tbsp soy sauce
  • 2 green onions sliced
  • 1 tsp sesame oil

Instructions

  1. Heat 1 tbsp oil. Scramble eggs. Remove.
  2. Add remaining oil. Cook chicken 4-5 min.
  3. Add frozen veg. Stir-fry 2 min.
  4. Add rice soy sauce. Stir-fry 3 min.
  5. Return eggs. Add sesame oil green onions. Toss.

Notes

Best with day-old rice. Great for using leftover veg.
