Chicken Fried Rice
Quick economical fried rice using leftover rice and chicken.
Ingredients
- 2 cups cooked cold rice
- 1 chicken breast diced
- 2 tbsp oil
- 2 eggs beaten
- 1 cup frozen mixed veg
- 3 tbsp soy sauce
- 2 green onions sliced
- 1 tsp sesame oil
Instructions
- Heat 1 tbsp oil. Scramble eggs. Remove.
- Add remaining oil. Cook chicken 4-5 min.
- Add frozen veg. Stir-fry 2 min.
- Add rice soy sauce. Stir-fry 3 min.
- Return eggs. Add sesame oil green onions. Toss.
