Healthy Lunchbox Muffins
Savoury cheese and spinach muffins that travel well and taste great cold or warm.
Ingredients
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup grated cheddar
- 1 cup chopped spinach
- 2 eggs
- 1/2 cup milk
- 1/4 cup oil
Instructions
- Preheat oven to 180C. Line a 12-hole muffin tin with cases.
- Mix flour, baking powder, salt in a bowl.
- Stir in cheese and spinach.
- Whisk eggs, milk, oil. Pour into dry ingredients. Mix until just combined.
- Divide among cases. Bake 18-20 min until golden.
