Healthy Lunchbox Muffins

Savoury cheese and spinach muffins that travel well and taste great cold or warm.

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup grated cheddar
  • 1 cup chopped spinach
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup oil

Instructions

  1. Preheat oven to 180C. Line a 12-hole muffin tin with cases.
  2. Mix flour, baking powder, salt in a bowl.
  3. Stir in cheese and spinach.
  4. Whisk eggs, milk, oil. Pour into dry ingredients. Mix until just combined.
  5. Divide among cases. Bake 18-20 min until golden.

Notes

Freeze well for up to 3 months. Thaw overnight in the fridge. Great savoury option for lunchboxes.
