Quick Black Bean Quesadillas
Crispy, cheesy black bean quesadillas ready in 15 minutes. Naturally vegetarian.
Ingredients
- 4 large flour tortillas
- 1 can black beans, drained
- 1 cup shredded cheddar
- 1/2 tsp cumin
- Butter for frying
Instructions
- Mash black beans with cumin and salt.
- Spread on half of each tortilla. Sprinkle cheese. Fold.
- Cook in buttered skillet 2-3 min per side until golden. Slice and serve.
