Quick Black Bean Quesadillas

Crispy, cheesy black bean quesadillas ready in 15 minutes. Naturally vegetarian.

Ingredients

  • 4 large flour tortillas
  • 1 can black beans, drained
  • 1 cup shredded cheddar
  • 1/2 tsp cumin
  • Butter for frying

Instructions

  1. Mash black beans with cumin and salt.
  2. Spread on half of each tortilla. Sprinkle cheese. Fold.
  3. Cook in buttered skillet 2-3 min per side until golden. Slice and serve.
