Kid-Approved Hidden Veggie Pasta
A sneaky, kid-friendly pasta dish packed with hidden vegetables in a rich, cheesy sauce.
Ingredients
- 8 oz pasta (elbows or rotini)
- 1 zucchini, grated
- 1 carrot, grated
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can crushed tomatoes
- 1/2 cup heavy cream
- 1 cup shredded mozzarella
- 1/4 cup grated Parmesan
Instructions
- Cook pasta. Drain.
- Sauté onion 3 min. Add garlic, zucchini, carrot. Cook 5 min until soft.
- Add tomatoes. Simmer 10 min. Blend until smooth if desired.
- Stir in cream, mozzarella, Parmesan, and pasta. Heat through. Serve warm.
