Ingredients
  

  • 300 g pasta
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan

Method
 

  1. Cook pasta. Reserve pasta water.
  2. Heat oil. Cook garlic 30 seconds.
  3. Add spinach. Cook until wilted.
  4. Add ricotta and Parmesan. Stir. Add pasta and pasta water as needed. Toss. Serve.
