These mini quesadillas are perfect for lunchboxes.

Ingredients
  

  • 4 small tortillas
  • 1 cup cooked chicken shredded
  • 1 cup shredded cheese
  • Cooking spray

Method
 

  1. Sprinkle cheese and chicken on half of each tortilla.
  2. Fold over. Spray with oil.
  3. Cook 2 min per side until golden.
  4. Cut into wedges. Pack.
