Ingredients
  

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 cups grated carrots
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 1 cup icing sugar

Method
 

  1. Preheat oven to 180C. Mix dry ingredients.
  2. Add oil, eggs, and carrots. Mix. Pour into a lined tin.
  3. Bake 28-30 min. Cool completely.
  4. Beat cream cheese, butter, and icing sugar. Frost cake.
