Kid-Approved Hidden Veggie Pasta

A sneaky, kid-friendly pasta dish packed with hidden vegetables in a rich, cheesy sauce.

Ingredients

  • 8 oz pasta (elbows or rotini)
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can crushed tomatoes
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan

Instructions

  1. Cook pasta. Drain.
  2. Sauté onion 3 min. Add garlic, zucchini, carrot. Cook 5 min until soft.
  3. Add tomatoes. Simmer 10 min. Blend until smooth if desired.
  4. Stir in cream, mozzarella, Parmesan, and pasta. Heat through. Serve warm.
