Apple & Peanut Butter Sandwiches
These apple and peanut butter “sandwiches” are a clever, healthy twist on a classic combination. Sliced apples replace the bread, with creamy peanut butter sandwiched in between. They’re naturally sweet, protein-packed, and fun to eat. Best of all, they take just 5 minutes to assemble and hold up well in a lunchbox without getting soggy.
Ingredients
- 1 large apple (Granny Smith, Honeycrisp, or Fuji work best)
- 2 tablespoons peanut butter (creamy or crunchy)
- 1 tablespoon granola or crushed cereal (optional, for crunch)
- 1 teaspoon honey or maple syrup (optional)
- A squeeze of lemon juice (to prevent browning)
Instructions
- Core the apple and slice it horizontally into rounds about ¼-inch thick. You should get 4-6 slices from one apple. Try to keep the slices even in thickness.
- Lightly brush one side of each apple slice with lemon juice to prevent browning. This keeps the sandwiches looking fresh until lunchtime.
- Spread a thin layer of peanut butter on half of the apple slices. If using honey, drizzle it over the peanut butter. Sprinkle granola on top for extra crunch.
- Top with the remaining apple slices to create apple “sandwiches”. Press gently so the peanut butter holds everything together.
- Pack in a lunchbox container. If stacking, place a piece of parchment paper between layers to prevent sticking. Best eaten the same day.
