Lentil Soup

Protein-packed lentil soup that costs very little to make.

Ingredients

  • 1 tbsp oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 1 cup red lentils rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. Heat oil. Saute onion carrots celery 5 min. Add garlic 1 min.
  2. Add lentils tomatoes broth cumin paprika salt pepper.
  3. Bring to a boil. Simmer 25-30 min until lentils tender.
  4. Stir in lemon juice. Serve with crusty bread.

Notes

Hearty and nutritious. Freezes beautifully. Add lemon before serving.
