Mediterranean Chickpea Salad
A fresh Mediterranean chickpea salad with cucumber, tomato, feta, and zesty lemon dressing. Ready in 10 minutes and perfect for lunch.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ cup diced red onion
- ¼ cup crumbled feta cheese
- ¼ cup Kalamata olives
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Combine chickpeas, cucumber, tomatoes, red onion, feta, and olives in a large bowl.
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently. Serve immediately or refrigerate.
