Mediterranean Chickpea Salad

A fresh Mediterranean chickpea salad with cucumber, tomato, feta, and zesty lemon dressing. Ready in 10 minutes and perfect for lunch.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup diced red onion
  • ¼ cup crumbled feta cheese
  • ¼ cup Kalamata olives
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine chickpeas, cucumber, tomatoes, red onion, feta, and olives in a large bowl.
  2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour dressing over the salad and toss gently. Serve immediately or refrigerate.
